I tested another recipe from Pinterest today, called the Cornmeal-Crusted Chicken Nuggets with Blackberry Mustard. At 184 calories each serving, it is a really great substitute and grown-up version of McDonald's chicken nuggets with sweet and sour sauce (which is a whopping 510 calories!).
I revised this recipe according to what I had in my kitchen, so mine came out at a higher calorie count at 233 calories per serving, but it is still better than McDonald's!
Low Cal So Cal's Chicken Nuggets with Blueberry Mustard Sauce
INGREDIENTS:
1 cup fresh blueberries
1 1/2 tablespoons yellow mustard
2 teaspoons honey
2 boneless, skinless chicken breasts (or 4 kabob skewers) (1 lb.)
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons corn flake crumbs
1 tablespoon extra virgin olive oil
DIRECTIONS:
1. Mash blueberries, mustard, and honey in a small bowl until it looks like a chunky sauce.
2. Cut chicken breasts into cubes or remove chicken from kabob skewers.
3. Sprinkle chicken with salt and pepper and toss.
4. Add corn flake crumbs to chicken and toss to coat.
5. Heat oil in a large nonstick skillet over medium-high heat.
6. Reduce heat to medium and cook the chicken, turning once or twice, until browned and just cooked through, 6 to 8 minutes total (thinner nuggets will cook faster than thicker ones).
7. Serve the chicken nuggets with the blueberry mustard. Bon apetit!

Just enough sweet and salty (see a trend?) for my taste and very filling (pictured is one serving). You can cut back on the salt though as I found even the smaller amount I put compared to the original recipe was more than I needed.
